Easy Potato Soup recipe:

Ingredients:

  • 2 cups yukon gold potatoes, peeled and cubed
  • 1 can corn niblets, drained
  • 1 can cream of chicken soup
  • 5 slices of bacon, diced
  • 1 large white onion, diced
  • 1 1/4 cup milk
  • 1 cup sour cream
  • 1 cup chicken broth
  • Salt & black pepper

Directions:

1. Add bacon and onion to a large soup pot.

2. Cook on medium heat until the onion is translucent and bacon is crispy.

3. Add chicken stock to deglaze the pot and get the bacon bits from the bottom.

4. Peel and cut potatoes and cook in the microwave on high for five minutes, until fork tender.

5. Add cooked potatoes and remaining ingredients to the pot.

6. Simmer on medium heat for 30 minutes.

7. Add salt and pepper to taste.

8. Serve with garlic toast or crusty french bread.

Tips and tricks:

  • Store leftovers in an airtight container in the fridge for up to a week.
  • You may want to double or triple this recipe depending on how many mouths you have to feed.
  • Use an immersion blender to create a smooth creamy texture and change the consistency of your soup
  • Leftover mash potatoes work great in this recipe! I use baked russet potatoes and simply chop potatoes or use a potato masher to make mashed potatoes to add to the soup.
  • Add a teaspoon or two of corn starch to thicken the broth if needed.
