reshmi paneer recipe | paneer reshmi recipe | reshmi paneer masala with step by step photo and video recipe. north indian or punjabi cuisine are known for its myriad range of paneer based curries. these mainly differ with the way paneer is used in a range of sauces with different spices and vegetable bases. one such simple and easy paneer curry recipe is reshmi paneer recipe known for its unique paneer slices with capsic*ms, onion and tomatoes.
well many would argue that there would not be any significant difference between the paneer reshmi recipe and any other paneer gravy-like kadai paneer or paneer masala. i would say there are significant differences with the way this curry is made compared to others. the main visible difference is the way paneer is diced or sliced. paneer is sliced lengthwise. even the capsicum and onions are sliced lengthwise which just gels with the paneer. in addition to it, the colour of the gravy is more bright in colour compared to kadai paneer as it full of spices. this makes it visibly attractive. moreover, the spices used in this recipe are minimal and you would realize that when you start reading the recipe card anyway.
furthermore, before wrapping up the recipe post, i would like to highlight some tips, suggestions and variations to paneer reshmi recipe. firstly, this recipe is typically made as gravy based curry, but can also be made as a dry variant. the dry variant looks like paneer jalfrezi, but i would suggest to make it as gravy. secondly, the paneer has to be super moist to be used in this recipe. i have used homemade paneer, but you can also use store-bought ones, but before buying check the expiry date for its freshness. lastly, you can experiment the recipe by adding more vegetables in addition to onion and capsicum. you can add vegetables like corn, peas, carrots and even beans to make it a vegetable-based reshmi curry.

Ingredients
- 2 tbsp oil
- ½ onion, sliced
- 1 tsp ginger garlic paste
- ½ capsicum, sliced
- 1 tomato, sliced
- 1 tbsp butter
- 1 tsp cumin / jeera
- ½ tsp turmeric
- ¾ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- ¼ tsp cumin powder
- 1 cup tomato pulp
- ¼ cup cashew paste
- ¼ cup water
- ½ tsp salt
- 15 pieces paneer / cottage cheese
- 2 tbsp cream / malai
- ¼ tsp garam masala
- 2 tbsp coriander, finely chopped
Instructions
firstly, in a large kadai heat2 tbsp oil and saute ½ onion,1 tsp ginger garlic paste.
now add½ capsicum,1 tomato and saute for a minute.
do not overcook, keep aside.
in the same kadai, heat1 tbsp butter and add 1 tsp cumin.
keeping the flame on low and add½ tsp turmeric, ¾ tsp chilli powder,½ tsp coriander powder and ¼ tsp cumin powder.
saute until the spices turn aromatic.
further, add 1 cup tomato pulp and saute well.
also, add ¼ cup cashew paste and saute on medium flame.
cook until the mixture thickens and oil separates.
furthermore, add ¼ cup water and ½ tsp salt. mix well, adjusting consistency as required.
add in sauted onion, capsicum and tomato.
also, add 15 pieces paneer and mix gently without breaking paneer.
add in2 tbsp cream and mix gently.
simmer for 5 minutes or until the flavours are absorbed well.
now add¼ tsp garam masala and 2 tbsp coriander. mix well.
finally, enjoy reshmi paneer recipe with roti or naan.
